TIPS + TRICKS


To ensure your baking runs smoothly every time...

1. Always make sure your ingredients are at room temperature, especially flours.

2. Do not double or halve cake and cupcake recipes. Gluten free baking is a science and the slightest change can ruin your results.

3. No peeking! Opening the oven door can alter the oven temperature and ruin results.

4. Always sift flours for lighter results.

5. Do not over-mix batters and begin to bake as soon as they are mixed to ensure they rise properly.

6. Never fill liners or pans more than 2/3 of the way with batter.

7. Never overcrowd your oven.

8. When making batters, always sift the dry ingredients together first before adding the wet ingredients.

9. Always spoon the flour into the measurement cup instead of scooping it out of the bag.

And when it comes to making raw treats... 

1. It is recommended to always soak cashews, or others nuts that you are using to get a creamy texture in filtered water first. This ensures that toxic enzymes that coat it are removed. Make sure you rinse them well after.

2. Unlike baking, with raw desserts, you can almost always halve or double your ingredients to change your batch size. Have fun experimenting! Ingredients can easily be added or subtracted as well.

3. Since the ingredients in raw desserts don't bind as well as baked ones, it is usually always recommended to store them in the refrigerator until serving.
