This delicious smoothie is everything you could hope for in an apple pie, all packed into one glass! Originally featured on Chictopia.

Serves 1

1/2 cup purified water
1/4 cup canned coconut milk
1 banana
1 red apple
1 tablespoon pure maple syrup
1 teaspoon cinnamon
1/2 teaspoon natural vanilla extract

Add all ingredients to the blender, mix well, and voila! Add more maple syrup or spices if desired. Can be served warm or cold.

1 1/2 cups Bob's Red Mill Gluten Free Pancake Mix
generous 1/4 cup chopped walnuts
1/4 cup cane sugar 
1 teaspoon cinnamon
dash of nutmeg (optional)
1 cup vegan milk of choice 
1 cup shredded carrots
1 teaspoon vanilla extract
1 tablespoon grapeseed oil
more oil, for frying

Add the pancake mix, walnuts, cinnamon, nutmeg, and cane sugar to a large bowl and mix well. Stir in the vanilla, milk and oil and mix again. Add in the carrots once mixed. Add more flour for thicker pancakes, or more milk for thinner ones

Add a drizzle of grapeseed oil to frying pan. Over medium heat, add spoonfuls of batter and flip when slightly bubbled on one side, and golden brown underneath. Cook other side until golden brown as well.

Drizzle with maple syrup and enjoy warm.

Pie lovers, take note! With only six ingredients, this simple no bake treat takes half the effort and tastes every bit as good as the real deal.

Serves 4-6

4 cups almond meal
2/3 cup pure maple syrup
1/2 cup raw pecans
2/3 cup canned coconut milk
1 cup raisins
1 teaspoon cinnamon
extra pecans, to garnish

Put the almond meal, and maple syrup in a large bowl and mix well. The consistency should be sticky when ready.

Remove and transfer to a 9” pie tin. Using a spatula, press the mixture evenly into the sides and bottom of the pie, keeping the edges around 1" thick. Set aside.

Add the pecans to the food processor and mix until there are no large chunks left. Add the coconut milk and blend again. Add the raisins and cinnamon and blend until smooth.

Remove the filling from the food processor and pour into the pie crust. Use a spatula again to smooth it out evenly. Garnish with pecans and chill in the refrigerator to set for an hour. Can also be served frozen.
