CHOCOLATE PEPPERMINT FUDGE


Rich and decadent, with a dash of peppermint. Delish!

1 1/2 cups extra virgin coconut oil, melted
1 cup pure maple syrup
1.5 cups organic cacao powder
2 tablespoons peppermint oil

Add all ingredients to a bowl and mix with a fork. Pour into a small bread pan, casserole dish, or container so they are approximately 1" thick. Put in the freezer until frozen. Remove and cut into small squares. Serve frozen.

PEANUT BUTTER YUMMIES


With a thick layer of peanut butter sandwiched between two pieces of caramel, these little morsels taste as good as they sound. Made with just five ingredients!

1 cup raw unsalted cashews
1 cup dried pitted dates
1/4 cup pure maple syrup
1 teaspoon natural vanilla extract
organic peanut butter

Grind the cashews in a food processor into a coarse powder. Do not over mix or they will become too oily. Add the dates, maple syrup and vanilla and blend until thick and sticky.

Remove from processor and flatten mixture on a small baking sheet so it is about 1/2" thick. You could also put it in a small container or casserole dish and smooth out with a spatula.

Place in the freezer for several minutes until it is easier to work with. Cut into small square pieces, add a smear of nut butter, top with another piece and you are ready to go!
