FLOURLESS CHOCOLATE COOKIES

1 tablespoons flax meal
3 tablespoons cold water
1/2 cup peanut butter
6 tablespoons pure maple syrup
1 teaspoon vanilla extract
1/2 teaspoon apple cider vinegar
1/2 cup dried unsweetened shredded coconut
1/4 cup organic cacao powder
scant 1/4 teaspoon baking soda
pinch of salt
1/2 cup dark chocolate chips

Preheat the oven to 375. In a small bowl, mix the flax seed and water to form a paste.

In a medium sized bowl, mix the peanut butter, maple syrup, vanilla and apple cider. Gently add in the coconut, cacao, salt and baking soda. When thoroughly mixed, add the chocolate chips.

Lightly grease a cookie sheet. Drop small spoonfuls of dough onto the sheet and flatten each one slightly.

Bake for 14 minutes. Let cool for a minute on the cookie sheet before transferring to a cooling rack.
