PEPPERMINT PATTIES


Dare we say that these taste better than the real thing?

1/2 cup coconut oil, melted
3 tablespoons agave nectar
1 tablespoon confectioner's sugar
1/2 teaspoon peppermint oil

another 1/2 cup coconut oil, melted
1/4 cup agave nectar
2 tablespoons cacao powder

In a small bowl, combine 1/2 cup coconut oil, agave, confectioner's sugar and peppermint oil. Freeze the mixture for several minutes, until it hardens.

In another small bowl, mix the other 1/2 cup coconut oil, 1/4 cup agave and cacao.

Remove patties from the freezer, and scoop into 12 small balls onto a plate. You can use parchment paper to ensure they don't stick, or simply use a butter knife later to remove from the plate. Put back in freezer.

When they are firm, remove from the freezer and squish until flat. You can smooth them out with the back of a spoon.

Use a fork and dip each patty into the chocolate to coat it. After each patty is coated, put them back in the freezer for 30 seconds to harden. Remove when ready, and dip each one into the chocolate mixture again. Repeat until chocolate is finished.

Store in the freezer until ready to serve.
