OATMEAL LACE COOKIES


An amazing gluten free, vegan cookie. Full of peanut butter too!

1/2 cup Bob's Red Mill Gluten Free Flour
1/2 teaspoon xanthan gum
1/2 cup rolled oats
1/2 cup organic cane sugar
4 tablespoons of flax meal
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon sea salt
1/4 cup pure maple syrup
1/4 cup natural peanut butter
1/4 cup raisins
2 tablespoons grapeseed oil
1 tablespoon applesauce

Preheat oven to 325 degrees. Add all of the dry ingredients to a large bowl and mix well. Add the wet ingredients to another bowl and gently add to dry ingredients after mixed.

Add the dough to a greased cookie sheet and press a fork into the surface of each cookie to flatten. If the fork sticks, run it under some water before each time you press.

Bake for 13-15 minutes. Transfer to a cooling rack when finished.
