| Makes approx 14 Sweetness - 3/3 Difficulty - 2/3 1 tablespoons flax meal 3 tablespoons cold water 1/2 cup peanut butter 6 tablespoons pure maple syrup 1 teaspoon vanilla extract 1/2 teaspoon apple cider vinegar 1/2 cup dried unsweetened shredded coconut 1/4 cup organic cacao powder scant 1/4 teaspoon baking soda pinch of salt 1/2 cup dark chocolate chips Preheat the oven to 375. In a small bowl, mix the flax seed and water to form a paste. In a medium sized bowl, mix the peanut butter, maple syrup, vanilla and apple cider. Gently add in the coconut, cacao, salt and baking soda. When thoroughly mixed, add the chocolate chips. Lightly grease a cookie sheet. Drop small spoonfuls of dough onto the sheet and flatten each one slightly. Bake for 14 minutes. Let cool for a minute on the cookie sheet before transferring to a cooling rack. |

Very cool! Especially since my son is allergic to soy and I thought he would never be able to eat chocolate anything (since most chocolates seem to have soy lecithin!). Where do you get the dark chocolate chips without soy lecithin? :)

ReplyDeleteYou can also try mixing coconut oil, cacao powder and maple syrup and freezing it. Once its frozen, break it into chunks and voila! Your own chocolate chips. They keep best when cold.
